Leftovers

Good morning!  I just thought I would leave you with a quick post before I get ready for my girlfriends that are coming up to spend the day with me.
Remember the Corn Saute from my previous post.  Well the next day I had it for lunch but added some extra yumminess to it.  I sauteed up some swiss chard in a hot pan, added some chickpeas, Corn Saute mixture and heated it through.  Next I spooned it into a bowl and topped it off with avocado.  This made for a very filling lunch.

Lemon Cucumber
If you think regular cucumbers are refreshing you must try these, just a slight lemony taste to them.

  2. Ooo lemon cucumber! It looks like a melon to me on the outside but the inside is pure beauty! I love the colors..I don't know why it looks a little like a spider web.
    I would love to add some slices to a gallon of ice water!

  5. I haven't seen or heard of lemon cucumber before either. It looks huge. I'm guessing you found it at a farmers market?

  6. We grew lemon cucs this year and only had a few that were the size of the one you have in your picture! Yumminess is right.

  7. That lemon cucumber looks quite interesting. Does it taste any different, or does it just look like a lemon? I wonder if I could find one of these at my farmer's market, I'm always up for new produce!

  8. The lemom cucumbers have a very faint lemon taste. We love cucmber in water but haven't tried these in water yet but I can only imagine it was be really good.
