Gluten Free Lemon Bars/GF Homemade Bread and a Raw Food Diet e-booklet GIVEAWAY!

I just realized how long it's been since my last blog.  Yikes! 
I missed signing up for Vegan MOFO which I really wanted to do to get my butt into blogging more consistently.  My dog Ace is having health issues and I wasn't focused last week because of it. That's when I noticed I just missed the cutoff to sign up. Regarding my Ace dog?  It seems he may have been bitten by a tick from who knows when that has now caused an auto-immune disorder.   His blood platelets were so low when I rushed him into the vet, his mouth and penis were bleeding along with a bunch of bruising that just happened so quickly. He even started bleeding a bit in his eyes. Talk about being FREAKED OUT!!!  He probably will have to be on prednisone for the rest of his life and no more vaccinations for this doggy.  He started having some issues last spring which we treated and then symptoms started coming back so we treated him again in the summer.  Then boom it came back full force this time.  I'll be taking him in for blood work check ups to make sure he continues to make new blood platelets and that the meds are working for him.  This leads me to a question.  Do you know or are you using any type of product to help build your dogs immune system?  I'm thinking if I can help build his immune system up the lower dosage of prednisone he would need.

Shall we move on to some good stuff!

Gluten Free Lemon Bars

I was inspired to make these bars because my son loves lemon bars and the ones he brought back
home from his visit with his grand parents weren't gluten free although they were vegan and amazing!  The lemon filling is taken from Veganomicon and the crust I made up and you can't even tell it was gluten free.  I have to make them one more time and write down the measurements before I can post.
This is my fifth attempt at making a home made gluten free vegan bread.  The first two times I used a gf bread mix and the other 2 from other recipes online.  They were heavy, rock hard and/or raw inside. This one has turned out all 3 times so it's a keeper and it's really good!  My son was very proud of me for having a success with this.  The recipe is from The Whole Life Nutrition Kitchen. 
 
 
As you can see it's makes great toast too!  I left it in a little too long...ooops!
It freezes really well too if you want to make a couple of loaves and freeze one or half of one if you aren't going to eat some everyday.

    1. Chow-thank you! Ace is just starting to act more like himself. We are not supposed to play with him or walk him until his next vet visit.

  3. That bread looks awesome! I haven't had much luck with GF yeasted bread so far yet either, so I'm happy to see that there are recipes out there that truly yield beautiful results.

      Wow even you haven't been able to make GF bread? Wowza lady! you are like the queen of baking!!! lol! The key is measurements and paying attention to every direction. I should add that this recipe has some helpful hints that I'm so glad I read because I had to add about 1/3 more water to the batter to get the consistency.

  6. so scary on Ace, JoLynn. hugs and healthy thoughts are coming your way! i hope he does well on the prednisone. when julie was immune-suppressed during chemo we stopped feeding her dry dog food so her system wouldn't have to work so hard. we still have her on a chicken-brown rice-kale-sweet potato-carrot-green bean-pea+ vitamins diet that i make each week (i make a bunch and freeze her meals in individual containers). it seemed to work well and i have heard that l-lysine is great for boosting the immune system. i know you feed Ace some greens and other yummies, but if you have him on dry dog food i would consider taking him off of it (raw meat is not recommended for immune-suppressed dogs) and trying homecooked + l-lysine to see if that helps him out.

    also - you might want to consider checking around for a veterinarian who has studied and practices acupuncture and alternative/holistic medicine. if/when julie's cancer metasticises we have elected not to treat her with chemotherapy again due to her becoming so defeated and depressed the first time around so we'll be taking her to a local vet here who practices alternative medicine to see if they can help her out should her cancer reappear.

    1. Jessy!-Thank you so much for this extra info. I was just thinking last night about him eating the dried food even though I add fresh veggies to it. Dried food isn't what is natural for these dogs really. I just order some l-lysine so that's perfect. Thanks for the update on Julie too. I think this is good info for everyone. Actually the lady down the street had a dog that was 24yrs old and died due to 2 dogs attacking her. The lady made her food and she says that's why she lived so long.

  7. OH I am happy to see a gluten free bread recipe that works. My grandson and daughter are GF and bread is the hardest thing to find. :o)

    1. Veg-a-nut...I've made this recipe a few times and it's turned out great each time. Make sure to read the helpful tips before the recipe because it really helps. I didn't have to do the water bath to help the bread rise.

  8. Dee-licious lemon bars! They're always such a treat, even though I rarely think to make them. It's the perfect recipe to break out in the winter though, when few fruits are in season and a little extra brightness is always appreciated.

    As for raw food meals, I don't make many, but I do love a good old spiralized zucchini smothered in a tangy pesto sauce and sprinkled with almond parm.

  9. Aww your poor dog.
    Echinacea is a powerful immune booster. I did a lot of research because we have an older dog and he was starting to suffer. We have been giving it to him for a while and he has not been sick since. It is definitely worth reading up about.
    N.b The best echinacea products contain mostly roots rather than flowers or leaves.
