Perfect Summer Grilled Dinner & Cleo dog

I hope you are all having a great summer.  We've pretty  much just been hanging out.  We got some bad news regarding our lab Cleo a few weeks ago.  She has osteosarcoma(bone disease) and it's progressing pretty fast.  Her xray showed her shoulder bone is mothlike all the way through..she only has a very thin solid strip of bone on her front right leg.  Sooooooooo....only option is to keep her comfortable and keep her pain under control as much as possible.  We are taking it day by day.  Lot's of emotions flowing...Keaton has taken to sleeping on the floor so Cleo can sleep with him.  It's hard to watch your kid go through something like this while Dave and I are so sad as well.  Sorry, this is really hard for me to write right about right now so I'll let you know more soon.

I'd like to share with you a really good Tofu Lasagna that is from the Martha Stewart mag. that I made last night on the grill.  I was wanting to make this for months now and I finally got to.  I was so excited at how the finished product turned out and so excited!!! 

It has grilled zucchini, crookneck squash, tofu, basil, pesto and tomatoes..  Yum, yum, yum!
We ate this with some Rustic Wheat Bread and Grilled Artichokes.
It isn't heavy which is really nice.  Just perfect!
I made Dave a sandwich with the leftovers for lunch today.

I highly recommend  making this...It's just so pretty too.  Get thie recipe by clicking here.  The marinade it says to make...well I actually used that on the vegetables before grilling.  They have a slight lemony taste which is so refreshing.

    Cleo, Ace, Merlin, you, Dave and Keaton are in my thoughts. i'm so very sorry to hear about Cleo and the osteosarcoma. you are too wonderful to keep her comfortable and as happy as she can be - the picture of Keaton sleeping on the floor with her reminds me of when i would sleep on the floor with Jasmine so she could sleep with me, too. i'm so very sorry, but i'm so very glad Cleo has such a wonderful, loving, and open-hearted family to support and care for her. please keep us posted and i'm sending all of you lots of hugs and happy thoughts.

  6. It's so sad when a beloved animal friend is suffering like that. And then added to it to see our kids having such a hard time. I wish you all well during this period.

    On a bright note, that lasagna/sandwich looks outstanding! I'm impressed Martha offered something like that.

  7. Those photos really do say it all... Heartbreaking, but also seeing their bond so clearly must bring everyone some comfort, including Cleo. She's clearly well-loved, and I'm sure she must feel it.

  8. Blessedmama/Hannah-Cleo has been by our sides alot recently and whines to us so we can pet her and pay attention to her. She is looking more tired as each day goes by. The hard part is that we are going to be the ones who have to decide when to put her down. She will continue to be stoic and continue on for us no matter how much pain she in. It's going to be soon and I just can't imagine how it will be without her.
