Vegan Mofo #7/Simple Lentil Soup w/GF Chickpea Flatbread

It's been a week of MoFo'ng already... wow it flew by!  I've been trying to view other blogs this month that I've never been on before and it makes me so happy!  Everyone is doing fabulous and there is so much yummy vegan food!

  Lentil soup is one of those that you can add and do so much to.  I chose last night just to do a simple lentil soup.
Lentil Soup

Recipe:

Olive oil
1  1/4 C. brown or french lentils, uncooked but rinsed
2 med. yellow onions, diced
6 garlic cloves, finely chopped
1 1/2 C. celery, sliced
2 C. carrots, chopped
3 red tomatoes, chopped with juices
1/3 C. white wine
6 C. un-chicken broth or vegetable broth
1/4 tsp thyme
red pepper flakes, optional
*s & p to taste
balsamic or chili oil, drizzled to serve (optional) 

1) In a large stockpot heat up 1-2 Tbsp. Olive oil.
2)Add in onion, garlic, carrots and celery cook until soft.
3)Add in red tomatoes, stir and let cook until they are quite soft.
4)Mix in lentils, white wine and thyme and cook for about 2min.
5)Pour in broth, stir and bring to a boil.
6)Once the mixture is boiling, cover with lid and bring to a simmer for about 40-45min. Cook until
   lentils are soft.
7)Once lentils are soft, use an immersion blender to blend some of it or take a cup or so and put into blender.  Blend until pureed and add back into mixture.  Stir thouroughly and add red pepper flakes if you wish and continue to cook for 10min. more.  Depending on how salty your broth is you may not need any salt.
8)Ladle into bowls.  You can drizzle balsamic or a chili olive oil on top if you wish.


Berean (Chickpea) Flatbread


Yesterday on the Melomeals $3.33 a day blog I saw these delicious flatbreads Melody  made with chickpea flour.  These are totally gluten free which is great, especially for Keaton.  The chickpea crepe recipe I usually use also contains white flour so I was very happy to make these ones. So last night I whipped some up and served them with our lentil soup!  Keaton loved these, alot. You must check them out try them for yourselves.    I also added some fresh rosemary to half the batter, yummy too.

gluten free coconut carrot cookies

Happy Tuesday to ya'll!  Well it looks like it's going to rain again.  I'm okay with it, we need it. 
So I got my hair cut (yay)it actually styles now and doesn't lie flat against my head! I quite a bit chopped off, it was pretty dry on those ends.  I was using a citrus conditioner for a while and well, I guess it was stripping
my hair. 
There's nothing like a refreshing(fresh)juice in the morning.  Cucumber, apple, romaine and celery. 

It's time to go grocery shopping again but until that time it was pantry and refrigerator shopping.  So last night it was lentil soup!  Perfect meal actually cuz, dang it was cold out last evening.  Lots of carrots, used up the rest of my fresh spinach and tomatoes.  Wallah, a pretty and satisfying, warm the tummy soup!  
Now for some sweet treats. Gluten free coconut carrot cookies.  I had the taste for carrot cake and coconut cookies so with all the carrots I have for juicing(I buy the 10lb organic bag from Costco) I decided on adding some carrot.  Here is my recipe and just so you know you can minus the spices and carrot and these make fabulous coconut cookies. 

Gluten Free Coconut Carrot Cookies

1/2 C. Sorghum flour
1/3 C. rice flour
1/4 C. oat flour(gluten free) you can make your own by grinding as well
1/4 tsp xanthum gum
3/4 tsp baking powder
1/2 tsp cinnamon
dash of nutmeg
1/4 tsp salt
1/2 C. oats (gluten free)
1 Tbsp. Earth Balance + 3 Tbsp canola oil or (just coconut oil melted)
1/3 C. maple syrup*
1 tsp. vanilla
2 tsp rice milk or non dairy milk
1 med. carrots, peeled and grated
1 C. shredded coconut* 
1/4 C. walnuts, chopped(optional)

       Preheat oven to 375.

In a small bowl combine flours, baking powder, salt and oats. Set aside.
In a medium size bowl whisk together Earth balance, canola, maple syrup, rice milk and vanilla.  
Stir dry ingredients to the liquid ingredients until well mixed.  Next stir in the coconut,carrot & walnuts.  Stir until well combined.

Use a tablespoon to drop dough on to cookie sheet.  Bake for about 12 min.
 Makes about 18 small cookies.

*NOTE:  I used sweetened coconut(that's the only kind I had on hand) so if you aren't using sweetened coconut use a bit more maple syrup or add sugar to the cookies to sweeten up more.  
When making these without carrot I used melted coconut oil and these turned out wonderfully.

Cozy lentil soup and homemade bread






Lentil soup is so easy to make and you don't need a ton of ingredients. This is just a basic recipe consisting of:


Olive oil 2-3 Tbsp.
4 garlic cloves( i love garlic)
2 onions, yellow chopped
1 1/2 Tbsp. thyme
1 C. carrots
1 C. celery
2 tomatoes, diced
1 1/3 C. green lentils, rinsed
6 C. vegetable broth
1 C. or more chard,kale, or any greens(optional)
balsamic vinegar
salt & pepper to taste.

Saute the garlic with the veggies until almost soft. Add the thyme and tomatoes for another minute or so. Add lentils and veggie broth. Bring to boil then simmer covered for 35-40 min. or until lentils are soft. Next if you choose to, it's optional, you can add in your green of choice and stir until wilted. Turn off heat add salt and pepper to taste.
When serving in each bowl you can drizzle a little olive oil and a swirl of balsamic. I like to use a thicker balsamic when I'm drizzling. If you don't have a thicker balsamic you can add regular balsamic to the whole pot, just a couple of dashes and stir in.

Also if you want a kick to it drizzle in some chile pepper olive oil. It rocks!
