Happy St. Patrick's Day!

I hope everyone is having a fun and fabulous day!  Our weather has been wonderful the past few days.  Spring has defininitely kicked in.  My brother and nephew came in from Arizona last Friday so we've been busy which has left no time for blogging much.  My nephew is napping so I'm taking this opportunity.  I will be making a seitan corned "beef" and cabbage tonight and will post at a later time.    I thought I would at least share some photo's of a hike we went on last weekend.  All of the flowers are starting to bloom.

Here is a toad my nephew found in our backyard yesterday.  When he finally started to move out of those rocks he left a present. hee hee. No I didn't take a picture of that! 
Here is a swiss chard wrap.  Chickpea salad with shredded carrot, tomato and avocado. So cool and refreshing and it's Green for St. Patty's Day.

  3. Okay love/freaked out by the toad. But that is so cool your nephew found it sunning/ taking in some rock therapy in your backyard. What is with the swiss chard? Such a tease for me. We now have one huge rouge sunflower (will post a pic on FB), green onions, herbs, grape vine is a budding, many bulbs a bursting, sweet peas, garlic, about 8 parsnips made it through our second harvest, but no swiss chard! Can't wait to try your last few recipes and ideas. Love your creativity in the kitchen.

  6. the little toad is adorable - he almost looks kinda grumpy. too funny on him leaving a little present behind. ah ha ha! spring is in the air here as well - i couldn't be happier. yay! i always forget about using swiss chard for a tasty wrap; thanks for the reminder, JoLynn! the flowers are making me most happyfaced! we've got dafodils coming out like crazy around here - they're so sunny and fun. i can't wait to read about and drool over your corned seitan and cabbage. i hope you're having fun entertaining family. i always love when we get visitors. it means i get to cook for people and i absolutely enjoy that the most. w00t!

  7. Lovely photos, and does that chard wrap look fantastic or what! I'll have to try that idea out as the weather warms up, it looks so light and refreshing.
